Bikini Recipe

Yields 10 people

To make the Clementine Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Cocktail (yields 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

For the Cordial: Combine all the components into a pot, bring to a gentle boil, agitating so the sugar melts. Next, remove from the heat allowing it to cool down entirely. Decant into an sealable bottle, cap it and refrigerate it in the refrigerator, it will last for up to one month.

Preparing the Premix: Combine all the liquids in a sizeable container, leave to sit for one hour, then strain preferably using muslin, to ensure it's fully clarified.

When ready to serve: Add 85ml of your cocktail base to a mixing glass containing ice, and stir lightly for a minute to cool it down. Pour to a chilled martini glass or equivalent, decorate with a few cranberries and complete it with a quick spritz with the mandarin essence above the glass.
